I love vegetables. Salads or cooked, it doesn’t matter. The thing that makes a great vegetable dish is a complementary dressing. Here are some of my favourites.
Basic vinaigrette
1 part balsamic, apple cider or malt vinegar or lemon juice
2 parts extra virgin olive oil
OPTIONAL: herbs, salt and pepper, wholeseed mustard
Add vinegar or lemon juice and EVOO to a clean jar. If using, add optional herbs and spices. Screw on the lid and shake until emulsified. Pour over salad and/or vegetable dish and toss to cover.
Salsa Verde
1 bunch of parsley (Continental or curly is fine)
2 anchovy fillets
juice of half a lemon
Extra virgin olive oil
Salt and pepper
OPTIONAL: Tabasco sauce
Add all ingredients to a food processor or blender and pulse until smooth. Great with fish.
